I try not to post too many recipes on here, because honestly, recipes are boring and I doubt many of you come here for them. But these pumpkin spice donuts that I made yesterday are way too good not to share and I’m way too proud of them to not talk about them.
A few months ago, I went to Trader Joe’s and while I was there I picked up a package of lentils, determined I would teach myself how to make them and what to make out of them. I’ve heard plenty about the healthiness of lentils and I thought, I can do something with these.
Yet, there they sat. First for days, then for weeks, and then for months, until one day (this past Monday) I came home and decided today was the day. I was going to figure out what to do with those lentils.
I scoured Pinterest for recipes and came upon one for a lentil chili. However, I was soon disappointed to find out that it called for brown lentils, and the ones I had were green. (Did anyone else know there are multiple colors of lentils? Not me.) Finally, I settled on this recipe from Slimming Eats, but due to the fact that I didn’t have all the ingredients and also due to my own common sense, I made some adjustments and created an even better recipe, which I like to call “Hearty Green Lentil Curry.”
Are you a smoothie person? I almost can’t go a day without drinking a smoothie or protein shake for breakfast. It’s easy to throw together when I’m running out the door, and way more delicious than eggs or healthy cereal. (I’ve developed this weird aversion to eggs in recent months – I can only eat them sunny side up or in an omelet. Every other way makes me gag.)
I have a lot of smoothie recipes that I rotate through, but my favorite by far is this PB&J smoothie that I usually end up drinking two or three times a week. It sounds super gross until you try it, and then you’re like, “why didn’t I think of this?”
